I bought 3 of these. I have not installed them yet, but I tested their activation temperatures. Here are the results:
Switch advertised to activate at 140°F actually activates at 130°F
Switch advertised to activate at 150°F will not activate even at 210°F
Switch advertised to activate at 160°F actually activates at 130°F (yes, you read that right)
